Description

A crisp and refreshing Pear, Apple & Cranberry Salad with Feta featuring juicy pears, crunchy apples, tangy dried cranberries, creamy feta, toasted pecans, and a homemade maple Dijon vinaigrette. Perfect for holidays, potlucks, or an easy everyday salad.


Ingredients

6 cups mixed salad greens

2 medium pears, thinly sliced

1 large Honeycrisp apple, thinly sliced

1/2 cup dried cranberries

3/4 cup crumbled feta cheese

1/2 cup toasted pecans, chopped

1/4 cup thinly sliced red onion

Maple Dijon Dressing:

1/4 cup olive oil

2 tbsp apple cider vinegar

1 tbsp Dijon mustard

1 tbsp pure maple syrup

1 tbsp fresh lemon juice

1 clove garlic, minced

1/2 tsp salt

1/4 tsp black pepper


Instructions

1. Whisk together the olive oil, apple cider vinegar, Dijon mustard, maple syrup, lemon juice, garlic, salt, and black pepper until smooth.

2. Wash and thinly slice the pears and apple. Toss with a little lemon juice if preparing ahead.

3. Toast the pecans in a 350°F (175°C) oven for 5 to 7 minutes, then allow them to cool.

4. Add the mixed greens to a large serving bowl.

5. Top with sliced pears, apple, dried cranberries, toasted pecans, red onion, and crumbled feta cheese.

6. Drizzle the maple Dijon dressing over the salad just before serving.

7. Gently toss until everything is evenly coated.

8. Serve immediately and enjoy.

Notes

For the best flavor, use ripe but firm pears.

Dress the salad just before serving to keep the greens crisp.

Goat cheese can replace feta for a tangier flavor.

Walnuts, almonds, or pistachios are excellent substitutes for pecans.

Store the dressing separately if making the salad ahead of time.
