  • 1 large egg

  • 2 tbsp all-purpose flour (or almond flour for gluten-free option)

  • 1 tsp vanilla extract (optional, for a sweet twist)

  • 1 tbsp honey (plus more for drizzling)

  • ½ cup fresh mixed berries (blueberries, raspberries, sliced strawberries)

  • Pinch of salt

  • Fresh mint leaves, for garnish


Instructions

  1. Preheat Oven: Heat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. Whip the Cottage Cheese: In a blender or food processor, whip the cottage cheese until super smooth—about 30–60 seconds.

  3. Make the Batter: In a bowl, mix the whipped cottage cheese, egg, flour, vanilla, honey, and salt. Stir until thick and creamy.

  4. Shape & Bake: Pour the batter onto your prepared baking sheet. Spread into a thin round (about ¼-inch thick).

  5. Bake: Bake for 12–15 minutes until golden and set. It should be firm to the touch but soft in the center.

  6. Cool: Let it cool for 5 minutes—this helps it hold the toppings better!
